Frittata

As promised, a recipe to share with you.

We obviously have an abundance of eggs around here, so you just know I would have an egg recipe to share, right?

Start by heating some olive oil in the skillet, 1-2 tablespoons. When the oil is hot, add one diced onion, 2 teaspoons minced garlic, and 1-2 cups chopped ham (bacon or sausage would also work). Cook until the desired doneness, if using raw meat be sure to cook until the meat is done.

Add 1 head of chopped cooked broccoli to the skillet and continue to cook until the broccoli is softened. Add a couple tablespoons of butter and mix in nicely.

In a large measuring bowl, whisk 8 large eggs with 2 tablespoons milk or heavy cream. Add seasonings and 1 1/2 cups shredded cheese. Pour the egg mixture into the ham mixture and stir well to combine. Allow the egg to cook in the skillet until the edges start to set. Then move to the oven. Bake at 350 for about 20-25 minutes or until the center is no longer jiggly and the top is golden.
